Who's behind the next great restaurant concept?

These hospitality teams have much to prove this weekend in the National ProStart Invitational. Not only are they competing for scholarships and top honors against schools from 48 states; they're returning champs.

The students from these high schools have represented their states at least twice in a row at the competition. Like the other management teams, they developed a hypothetical restaurant concept and will present it to a panel of judges May 19 and 20 in Anaheim, Calif. The judges act like restaurant investors, questioning them on budget, food costs, design, equipment, staffing and other criteria. After the presentation, the students answer another round of questions from a second set of judges, who pose questions on common, day-to-day challenges to show their critical thinking skills.

The winning teams will be announced Monday, April 20. The top five teams in the management and culinary competitions will earn scholarships from the National Restaurant Association Education Foundation, sponsors and culinary institutions.
