Poste Moderne BrasserieWashington, DC Restaurants across the country are becoming more committed to sustainability efforts, and Poste Moderne Brasserie is a trendsetter. Part of the family of Kimpton Hotels & Restaurants, Poste implements strict standards to reduce waste, source organic ingredients and buy locally as often as possible. The restaurant offers a wide selection of organic wine and maintains a highfunctioning organic herb and vegetable garden. After joining Poste in 2004 as executive chef, Robert Weland converted portions of the outdoor patio into the garden. Soon afterward, he and the management team implemented operational standards to increase the restaurant’s environmental efficiency. Poste uses 100 percent recyclable paper for menus and other printing needs, as well as energy-saving light bulbs and biodegradable corn-based straws. It also composts food scraps. |
