Training and certification programs remain our greatest asset when it comes to protecting restaurant guests and employees. Over the course of the last several months, we have learned that when restaurants demonstrate effective mitigation efforts—that includes following our Safe Operating Guidance, encouraging guests to wear masks, social distancing, and practicing good hand hygiene—the risk of transmission is low.
 
We continue to investigate the CDC’s recent expanded definition of “close contact” as a cumulative 15-minute time period. While six feet of distance over 15 minutes can be used as an operational guidance, the CDC notes that the data is limited, and a precise definition of “close contact” is difficult. Additionally, the update was made from a report and not a scientific study, and it lacks practical application to a restaurant environment.
 
Restaurants continue strict enforcement to ensure staff report to work only when healthy, wear face coverings throughout their shifts, practice effective hygiene, clean and sanitize work stations, and ensure air circulation and social distancing. These mitigation efforts reduce risk for guests and employees. However, restaurant employees are only half of the solution. We ask our guests to rejoin us when they are healthy and wear masks until they begin their dining experience. We believe that when restaurants and guests practice these safety measures, everyone can have a safe and enjoyable dining experience. 
 
At the Association, we continue to expand our suite of training and certification programs aimed at helping restaurants navigate operating in this new business environment. ServSafe is providing four free courses on COVID-related restaurant issues, including COVID-19 Precautions and Conflict De-escalation, Safe Operating Guidance, ServSafe Delivery: COVID-19 Precautions, and ServSafe Takeout: COVID-19 Precautions. These courses provide valuable resources for the entire industry.
